호박산모노글리세라이드(Succinylated Monoglycerides, SMG)는Mono-& Diglycerides에호박산(Succinic acid)이1-2개결합되어 있는 구조를 가진 화합물입니다. 내산성이강한 친수성유화제(HLB 5-7)로서식품분야에서 다양한 용도로 사용되고 있습니다. 특히식품첨가물로서 빵, 우유음료(산도조절), 마가린, 치즈, 음료 등다양한 분야에 적용 및 사용되고 있습니다.
