동식물 유지나 그것들로부터 유래한 지방산과 글리세린을 반응시켜 제조됩니다. 응용범위가 넓고 유화제 중에서 가장 많이 사용되고 있습니다. 글리세린은 3개의 수산기가 있어 그중에 1개의 지방산이 붙어있는 형태를
모노글리세라이드라 하고, 2개의 지방산이 붙어 있는 형태를 디글리세라이드, 3개가 붙어있는 형태를 트리글리세라이드라 합니다.
